Sometimes Simple is better!
 
With the weather warm up & the  smells of spring around us in Vermont! I love to fire up the grill!  My partner is a hunter and with a freezer packed with organic venison there is no reason to not! Locally caught, processed,low in fat, & packed with protein this meal is simple,delightful, easy and tasty. You are in touch with nature at the first bite : )
 
All I did was steam a sweet potatoes dependent on your microwave for 5-10 minutes under a microwave safe bowl. Then once your meat has only a few minutes left throw them on the gill with a little non-stick spray to give them a crisp, grilled flavor. ( dependent on your diet, you can then eat plain with a little salt and Pepper, top with butter, ketchup, fresh Vermont Maple syrup or like me , I love a little tart yogurt to top!
 
All I did for the Venison Loin was olive oil both sides and S & P both sides and put on the grill - one side 8 minutes then turn for another 4-6 minutes dependent on your liking!
 
Asparagus, was steamed for 2 minutes in about a 1/4 - 1/2 inch of water. Then  tossed with diced garlic, olive oil, lemon, balsamic .
Simple
Easy
Colorful
Healthy
and packed with Nutrition.

Simply Homemade Applesauce

Homemade Applesauce-Makes me feel warm and fuzzy inside. It brings a smile to my face and I feel like a little kid again! I use to love my Grandma Emilo's Applesauce!

Which I am very Happy About! For Applesauce
I use whatever Apples that are available. I know, I know
they say to use a certain kind, but me I like to go against the rules
and use many different kinds, I think it gives the Applesauce its own attitude
APPLESAUCE-
12 Apples( any kind you like!) peeled or not peeled up to you- Not peeling makes the sauce a have a nice little pink color to it! I peel mine though.
Then I Core and Chop them all up into pieces and throw into a giant pot and fill with about 1/2 inch water - 2 Tablespoons of Vanilla 1/2 teaspoon of salt! 2 Scoops of Date Sugar, Cinnamon to taste and about 1 Tablespoon of real or Sugar Substitute. I really love it with a Tablespoon of Maple Syrup but be creative use what you like. Then I just cover and bring to boil. Once boiling I turn it down and let it simmer stirring occasionally. Once the Apples are boiled all the way down ( They should be soft and airy ) I take off the heat and grab my immersion blender and blend until smooth. ( be careful it is hot!) Or you can put the liquid in a blender and blend until smooth but remember to blend hot liquids with  the lid  off or it will fly off through the air! Then the best part TASTE! Add more Cinnamon , a little lemon spritz, or honey until it tastes the way you like it! I like to let mine sit a bit then reheat and serve warm!

Mexicana Salad!

Mexican- Salad! Tonight I played with a color , a simple dish but a good one! & it is Gluenten free. It is so simple and you can be as creative as you would like!

Mexicana ensalada..

1 package of organic spring mix lettuce
1 chicken breast around 6 ounce( grilled, diced/chopped or you can chop up and pan fry)
1- 1/2 can of corn
1- small hot house organic tomato.
1/2 - red onion
black olives as many as you like or not.
1/2 of an Avacado sliced
1/2 diced Bell Pepper
26 sprits of Italian fat free dressing
1/2 can of black beans
2 - Tablespoons of fat free sour cream
2 Tablespoons of Salsa
1- slice jalepeno
1- Corn Tortilla ( sliced into strips and then placed in the oven to get it crispy- Spray a little pam on it, garlic powder and salt toss and top!)
1-wedge of lime to spritz!

1/2 - cup of Cheese( or vegan cheese) if you like( I did not use here) the extra fat is not needed.

you can change the dressing to ranch, full italian, balsamic anything you like( I tend to love the newman's lime as well!
 
Enjoy! I love to play with Mexican salads because you are able to use Tofu, Chicken, Beef you like and Fish or Pork anything is possible, you can make them as low-fat or high fat as you like and pick and choose your flavors and add fruit and or numerous veggies!!!!
